A childhood recipe with a Cajun/Keg spin:

The concept: making fries in the oven, but without potato: just carrot, parsnip, sweet potato and beet. And a few chunks of onion.

Fatly slice and soak root veggies, coat veg and onion with vegetable oil and bake at 425F on a greased cookie sheet for 15-20 min, turn over and bake 10 min. Keep beets apart during process to avoid mass pinko fries.

Salt, pepper and serve with chili parmesan dip (sour cream, grated sheep parmesan, pepper, salt, sambal oelek*).

A nice main dish: Montreal smoked beef on toasted rye, Dijon mustard, tomato, lettuce, mayo. (Dill pickles kept in reserve in case rye and Kosher meat order them. Ours didn’t.)

Garnish: honeydew melon and starfruit

*Preferably, in place of sambal use Louisiana hot sauce, or any hot pepper sauce containing cayenne. The point is to evoke the Earl’s chicken wings.
